Here Comes Peter Cotton Tail....

Happy Easter all- we had a great time Philip's family came over for lunch/dinner. It was great to see everyone again. For those who may not know on the Saturday before Easter I became Catholic....I got the whole schpeel. Baptism, Communion, Eucharist. A special thanks to the people that came to watch it happen, I know it was not short. I did not expect or anticipate you being there, but your support was much appreciated!!

The ceremony was loooooooooooooong, but beautiful. I've been waiting a long time to be Baptized and I was happy to do so and extremely nervous, but all worked out well.
Easter dinner was great we had all of Philip's brothers and their lovely families over for dinner including my fav all-star 'Papa Joe!'...we had lamb (we did this 2 ways. roasted in the oven and a butterflied cut on the grill.) ...Personal favorite was the grilled lamb. It was fast and tasted the best!
The award winning side dish goes to the green beans. Go figure. If you roast fresh green beans in the oven with olive oil and salt the natural sugars come out and they tastes better than candy....well maybe not if you're a sugar lover but we love our veggies here.

Then I made some cake pops for the take home treat...see pic ( I especially like the little chicks)...Martha Stewart is coming over for a lesson tomorrow. Happy Easter All!!
